Get Fit Friday: Week 2

Is it Friday already? This week went by way too fast and I was unable to get myself up and moving. My family and I have been battling some awesome chest, head, sinus cold thing and I thought for sure that by week 4 we'd be clear. But this thing is clinging on like a leech. I'll (hopefully) be back at it Monday, full force. And because I wasn't able to workout, I tried to at least eat healthy and had restrain myself from going into our cupboard to finish off the last of my Mini Cadbury eggs. Okay, I may have stolen 1... 
So for today's post I have another recipe. It's a healthy salsa that I made to serve over some delicious pulled pork for our Cinco De Mayo dinner. 
I also haven't really crafted since Christmas, I know shock! So I thought it'd be fun to add some bright colored garlands for our dinner festivities. I whipped these out in about 30 min and the thing I'm most impressed about is that Evan hasn't ripped them down yet. Knock on wood. But I'm really looking forward to the food. I'll take any excuse to make tacos!


Pineapple Avocado Salsa

1/2 a pineapple, peeled, cored and diced
1 small avocado, diced
2 tbs (or more) chopped cilantro
the juice from 1/2 a lime
Cayenne pepper
Salt and pepper

In a medium sized bowl, combine diced pineapple, avocado, and cilantro. Lightly toss with lime juice and sprinkle the teeniest amount of cayenne pepper and salt and pepper. Eat it with a spoon straight from the bowl or eat it in a taco form with this Hawaiian Hula pulled pork. Enjoy!

  2. I cannot wait to try this salsa! & I might need to try it over the pulled pork as well, yum!

    1. It is AMAZING over that pulled pork. Like I feel like I need to make it weekly. I served it with some coconut brown rice too and it was like an island party in my mouth.
